Marsala

Marsala: described by Pantone as "a naturally robust and earthy wine red", also known as the color of the year. Avocado & Egg Breakfast Muffin

If this tasty toast hasn't landed on your plate then I'm certain it has at least come across your Instagram Feed. I feel like avocado toast has gotten a lot of hype over the past few months. Why would something so simple and easy be worthy of talking about?!? Well... because avocado is not only good for you, but add it to some toasted bread along with a few other ingredients and you have something delicious on your plate. This has been my breakfast of choice for the past few months and I can honestly say that I'm not sick of it yet. My version is a little different than the original toast...

 
This is so simple and easy to prepare, leaving you with no excuse to not eat breakfast before dashing out the door to go to work.
 
Simply toast an English muffin...
 
 
Top with a few slices of avocado and a dash or two of hot sauce.
 
 
Add sliced tomato.
 
 
And finish if off with a fried egg.



 
Breakfast is served! 
 
Avocado & Egg Breakfast Muffin
Ingredients
1 Whole Wheat English muffin (I prefer Thomas)
1 Avocado
1 egg
1 tomato
Texas Pete Hot Sauce (or hot sauce of preference)
Lawry’s Seasoning Salt
Instructions
1.       Slice open an English muffin and place the two halves in a toaster oven. Toast until the edges brown.
2.       While the muffin is toasting, heat a small nonstick fry pan with olive oil and fry an egg. Careful not to overcook, you want the yolk to be runny. Season with a small amount Lawry’s seasoning salt.
3.       Slice one half of an avocado into pieces and place on the muffin once it has finished toasting. Add a few dashes of hot sauce (to your preference).
4.       Slice a tomato and place on top of the avocado.
5.       Finish off by topping it all with the fried egg.

Weekend Recap//The Ordinary

This past weekend was pretty low key and for that I was thankful. It was nice to be in town for a change. There was not a whole lot of the agenda which was great. I started my Saturday morning off with a bikini boot camp at the gym...probably not the best idea after having gone out the night before. It was a great work out though and I was really glad I did it.
 
Saturday evening my girlfriends and I headed downtown for dinner and drinks. I finally made it to The Ordinary.  I'm not sure what took me so long to check this place out. I suppose it could be the fact that a new restaurant opens every week in Charleston, making it hard to keep up.
 
Our table was upstairs, which in my opinion is one of the best seats in the house. We had a nice view of everything going on down below.

For dinner I had the arugula salad which consisted of radicchio, apples, walnuts and parmesan.


I also had the oyster sliders.  These lightly breaded fried oysters were accompanied by pickled carrots, cabbage, and Sriracha mayo all sandwiched between a Hawaiian Roll from  Brown's Court Bakery.  They were so delicious!

 
I also had a sampling of a few other dishes that were ordered at our table. The fennel soup was creamy and full of flavor. I'm actually not a big fan of fennel, but the taste wasn't overwhelming.

The crab toast was very fresh and the lemon and basil added a nice touch.

I caught a glimpse of a few of their seafood towers which also looked amazing. If your an oyster fan, check out the oyster shooters at the bar. These aren't your typical oysters soaked in vodka and cocktail sauce. These shooters are served on the half shell and placed on top of an orange juice and rum filled shot glass.

I will definitely be back for dinner again, but next time it will be for their prix fixe menu on a Tuesday for their Lobster Roll & Frites!
 
After dinner we decided to check out a dive bar off the beaten path called the Palace Hotel.  Don't be fooled, it's neither a palace nor a hotel. It's more like an eclectic locals spot with funky décor along with TV's for watching the games. We spotted a few things coming out of the kitchen that looked like good bar food. However, we however opted to end our evening with some "mini" bottles.
 
 
It was nice to check out some new places this past weekend and mark them off my ever growing list.

Buns, Blowout's & Braids//Hair Trends of 2015

Hairstyles change like the wind, and not all of them are suitable on everyone. Keeping up with the trends while maintaining your own look can sometimes be tough.  I find myself wanting to try new things with my hair but when I sit down in the chair at the salon the adventurous side of me disappears and I suddenly decide to go with "the usual." I typically just get a healthy trim and highlights, sometimes going a tad shorter for the summer. However, I will say that in the past I have stepped out of my comfort zone a few times and tried some new things, but nothing too crazy.

My hair is getting a little TLC this week and in the off chance that I decide to do something out of the norm, I've been researching some current trends for 2015.

Chicken Sausage & Peppers

In light of the New Year and the healthy eating kick that most everyone is on, (at least for a little while anyway) I thought I would share a healthy recipe that requires minimal effort.  I feel like the past couple of months I haven't been very disciplined when it comes to what's on my dinner plate. Well it's a new year and wiser eating habits are on the brain. With that being said, I would like to share a recipe that's easy on the waistline and the taste buds. 

I was trying to think back to all of the recipes that I use to make in the past that were simple and healthy, and I remembered this one. It's low carb, has protein, provides a dose of veggies and it brightens up the plate.


Start by heating olive oil in a large skillet over low heat and sauté some minced garlic. While the garlic is cooking, start prepping the veggies. Cut the bell peppers open and remove seeds and pith. Slice the peppers and onions so they are long in length. Place fresh mushrooms in a strainer, rinse and let drain.  Once the garlic has cooked until fragrant, add the peppers and onions and sauté.  After cooking the veggies for about 5 minutes adjust to medium heat and add in the fresh mushrooms.  Season the mixture with pepper, onion powder and low sodium soy sauce and continue to cook for about 10 minutes. (I omit salt from this recipe due to the sodium in the sausage and soy sauce.)
 
 
While the vegetables are sautéing, warm a skillet grill on medium heat and lightly coat the pan with olive oil spray. (an outdoor grill is great if you that option.) Cut each piece of sausage vertically into two pieces. Once the skillet is warm add the sausage and brown on each side. To add moisture to the sausage, add a small bit of water to the pan to create some steam and cover with a lid. Most chicken sausage is already fully cooked, so the goal is to create grill marks and a nice char. There are several varieties of chicken sausage to choose from and we have tried quite a few of them. I happen to like the Al Fresco brand with roasted peppers and asiago.  
 
 
Once the vegetables have sautéed down to your preference, ( I like mine to have a little crunch to them.) place them on the plate and top with the sausage.
 
 
This recipe is not rocket science by any means. My husband actually asked me why I was even bothering to post it. Well, I sometimes over think cooking when all I really want is something simple and fresh for dinner which is why I wanted to share this recipe. 
 


Chicken Sausage & Peppers
Ingredients
1 package of Al Fresco Roasted pepper Asiago chicken sausage (or brand of choice)
2 green bell peppers
1 red bell pepper
1 yellow bell pepper
1 onion
1 package of fresh mushrooms
2 tablespoons of minced garlic (or to taste)
1 teaspoon of pepper (or to taste)
1 teaspoon of onion powder (or to taste)
3 teaspoons of low sodium soy sauce (or to taste)
Instructions

3.       Cut the ends off of the onion, remove the skin and slice into long pieces as well.
4.       Place fresh mushrooms in a strainer, rinse with cold water and let drain.
5.       Add all bell peppers and onion to the skillet. Sauté for 5 minutes.
6.       Add in the fresh mushrooms to the veggie mixture.
7.       Season the vegetables with pepper, onion powder and low sodium soy sauce. Turn the heat up to medium, cover and continue to cook.
8.       While the veggies are cooking, coat a skillet grill with olive oil spray and warm on medium heat.
9.       Remove chicken sausage from packaging and slice in half vertically so that the sausage will lay flat in the pan.
10.   Grill the sausage for about 5 minutes on each side until they have a nice char and grill marks on them. Most chicken sausage is already cooked, so browning to add flavor is the key here. To add moisture to the sausage, add a few drops of water to create steam in the pan and cover keeping it moist.

NYE in the Mountains

Happy New Year!  I've been on a much needed vacation the past few days and it has been wonderful! Whit and I joined 3 other couples and headed off to the mountains last Wednesday to stay in a quaint little cabin in Ferguson, NC.  Ever heard of Ferguson, well neither had we.  Although it was far removed from any city life, it was nice to just enjoy not having plans and be away from it all. (Get ready for photo overload.)

We arrived Wednesday evening just in time to get settled, make dinner, and ring in the New Year.  Each couple took turns cooking meals each day. Whit and I took on the first evening and made a big pot of chili with a side of cornbread.


We celebrated throughout the evening with cocktails, cards against humanity and some dancing of course.

The weather was perfect on Thursday, so after taking in the beautiful views over a cup of coffee, we went hiking on a nearby trail.  We found a beautiful spot to stop and take some group photos.




This didn't go quite as planned
 
 After hiking we headed back to the house for a little happy hour and to warm up in the hot tub.
 
 

Later that evening we enjoyed a traditional New Years Day dinner consisting of pork, collard greens and black eyed peas.
 
 
On Friday we ventured out to Boone to explore the downtown area and have lunch.  We stopped at cute boutique called Boone Belles. They had some great things and even better prices. I couldn't leave without this floppy hat...I've been searching for the perfect one for a while now. 
 
 
We had lunch at Proper, an intriguing spot in town that from the outside really made you curious what was behind their doors. We were not disappointed. 
 
 
 
 
 
 
I had the roasted turkey and Vermont cheddar sandwich with rosemary pecan aioli, granny smith apples and lettuce on toasted sourdough with a side of tomato pie. This sandwich was delicious and so full of flavor. I would love to try and make my own rosemary pecan aioli in the near future.

After exploring the downtown area, we made our way back up the mountain to our cabin. The winding roads made for a long car ride.

Saturday was a rainy and gloomy day. Despite the weather, we still made the best of it and went on a run (in the fog) and enjoyed the hot tub, (with an umbrella.) It was so nice to relax and not have plans or anywhere to be.
 
 
Sunday it was time to say goodbye to the nice little escape from reality. The fog had settled in and our clear view turned into this. This picture doesn't do it justice, it was actually really beautiful in person.
 

We had an amazing trip with great friends....a perfect way to start the New Year! Now it's back to the real world.
