Cheese Wafers

One of my favorite snacks that my mom and I made when I was growing up were cheese wafers. These treats are not sweet, in fact they are the complete opposite. These savory, cheese wafers have a crunch to them and make the perfect appetizer to serve at parties. I typically only make them during the holidays, but I see no need in only sharing them once a year. They are perfect year round!

 
First, soften butter in a medium size bowl.  In a separate large bowl add flour, Rice Krispies, shredded cheese and mix together. Add softened butter to the dry ingredients and mix well. Refrigerate the dough for 2 hours making it easier to work with. Once chilled, roll the dough into golf ball sized balls and gently flatten on a lightly greased cookie sheet. Bake on 350 for 12 minutes or until the edges start to brown.


And there ya have it. Such a simple and easy appetizer.


 
Cheese Wafers
Ingredients
2 cups grated sharp cheddar cheese
1 cups of plain flour
2 sticks of butter, softened
2 cups of rice krispies cereal
½ teaspoon of salt
1 teaspoon of paprika 
Instructions
1.       Preheat oven to 325.
2.       Soften 2 sticks of butter in the microwave on medium heat.
3.       Combine cheese, flour, rice krispies, softened butter, salt, paprika and mix well.
4.       Refrigerate dough for 2 hours.
5.       Remove dough from the refrigerator and roll dough into golf ball size balls.
6.       Place dough on a lightly greased cookie sheet and flatten each dough ball with a fork.
7.       Bake 10 to 12 minutes until golden brown on the edges.

Weekend Recap + Nordstrom Clearance Favorites

I don't know about everyone else, but I sure could use more long weekends. It was so great to have an extra day to get caught up on all those little tasks that I've been putting off.

Saturday we met up with some friends downtown at the SEWE Festival.


I also met a new friend...

How cute is he?!?


We saw some cute baby tigers too, but I didn't get a picture of them.

On Sunday Whit and I finally made it to see American Sniper. I felt sure we were the last ones to watch this movie, but realized I was wrong when we walked in the theater to choose a seat and there were hardly any left. It was such a great movie.
 
We ended our evening with a mouthwatering pizza from Mellow Mushroom.
 
 
In other news... if you missed out on the President's Day Sales this past weekend, no worries because Nordstrom is having their clearance sale through February 22nd.

News Feed Friday


My little Friday afternoon pick-me-up in the photo above. Thanks to my co-worker, Alicia for bringing in pretty little cake pops!

The weekend is finally in sight and I'm really looking forward to having an extra day away from the office on Monday.

A Taste of New Orleans

Last week I had the pleasure of attending a cooking demo by guest Chef Ryan Prewitt of Peche Seafood Grill in New Orleans, LA.  Peche was honored with not one but two James Beard Awards. One for best new restaurant and Ryan earning the second for best chef: South. Needless to say, it was real treat to have Ryan cooking some of his traditional NOLA cuisine for us to sample.

First up, steak tartar served with smoked oyster aioli. I am still thinking about these things! The warm, crusty bread paired well with the cool temperature of the beef and the oyster aioli sealed the deal.

Next on the menu, fried catfish topped with tangy pickled collards greens in a chile broth. This dish had a healthy dose of salt as well as vinegar and those are both ok in my book.


We finished the meal off with baked royal red shrimp. There is no better way to serve them than with the head on, swimming in a lemon and chili butter bath and a side of toasted bread.
 
Not only is Prewitt an amazing chef, but he is also a great story teller, sharing his extensive knowledge of seafood and its journey from the sea to the table. Everything I ate that evening was so appetizing and full of flavor. I hope to one day make it to the Big Easy and check Peche in person.

Weekend Recap + Red Carpet Favorites

This past weekend was pretty low key. I went to a baby shower on Saturday for one my roommates from college. Last year it was all about the weddings and this year babies are on the way. This was the second baby shower that I have ever been to. With that being said, I am helping host one this summer and I'm welcoming any and all suggestions.

Sunday after church Whit and I stopped and got lunch at Tabbuli in West Ashley which just opened last month. There is another location downtown, however haven't been to that one either. The bar looked pretty cool inside and the food was good.



Since neither of had never eaten here before and we were not really sure what to order, we decided to get the Mezze Platter which had a little big of everything.


After lunch we headed downtown to take advantage of the beautiful weather and check out second Sunday on King Street. It was packed! If you've never been, you should definitely check it out. Every second Sunday of the month, King Street closes to vehicle traffic from 1pm to 5pm. Children, adults, families, friends and even pets come out to enjoy everything the downtown area has to offer.  


We stopped in a few stores and ended our afternoon at The Rooftop at the Vendue Inn.  This is one of my favorite places in Charleston to go for a cocktail because they have the best view. Of course since the weather was so nice out we didn't get our seat of choice, but we still found a spot where we could catch a glimpse of the water, and enjoy some nachos and beer.




We made it home just in time to tune in for some Red Carpet action at the Grammys.

I thought Taylor Swift looked amazing in her Elie Saab dress. The color looked great on her and the cut showed off her long and lean figure...legs for days!

Unfortunately, I can't say the same for Kim Kardashian or Rihanna.  Kim looked like she was wearing a bath robe, and Rihanna had this cupcake meets Barbie look going on.

 
On the other hand, Gwen Stefani was glowing in her red strapless gown she changed into for her duet with Adam Levine. Not only was the Atelier Versace gown flattering, her make up was on point too with her signature red lips.

Cheers to the weekend!!!
 
That is not your average glass of sweet tea in the photo above. That my friend is a mason jar filled with Firefly Sweet Tea Vodka and a few splashes of lemonade of course.  It's a great go to cocktail for the summertime and one of my favorites. If you're interested in taking a tour, the distillery is actually located right here in South Carolina.  

Making soup would be much more fun if I had one of these....I can't help but laugh every time I see it.

I find myself drawn to pretty pieces of stationary like these simple and vibrant notecards.

Kind Bars are a favorite snack in my house, so I was excited when I found this recipe from Kelly at Eat Yourself Skinny.

How charming is this little home?!? I don't know that I would be able to adapt but it sure is a good idea.

If you're in the market for a mirror, look no further! I'm kind of partial to this one, this one, and this one.    

How could this clip not be funny when you have these two performing together?!

For all of you Charleston residents, this restaurant (which also happens to be a favorite of mine) is offering a great deal throughout the month of February.
