Cheese Wafers

One of my favorite snacks that my mom and I made when I was growing up were cheese wafers. These treats are not sweet, in fact they are the complete opposite. These savory, cheese wafers have a crunch to them and make the perfect appetizer to serve at parties. I typically only make them during the holidays, but I see no need in only sharing them once a year. They are perfect year round!

 
First, soften butter in a medium size bowl.  In a separate large bowl add flour, Rice Krispies, shredded cheese and mix together. Add softened butter to the dry ingredients and mix well. Refrigerate the dough for 2 hours making it easier to work with. Once chilled, roll the dough into golf ball sized balls and gently flatten on a lightly greased cookie sheet. Bake on 350 for 12 minutes or until the edges start to brown.


And there ya have it. Such a simple and easy appetizer.


 
Cheese Wafers
Ingredients
2 cups grated sharp cheddar cheese
1 cups of plain flour
2 sticks of butter, softened
2 cups of rice krispies cereal
½ teaspoon of salt
1 teaspoon of paprika 
Instructions
1.       Preheat oven to 325.
2.       Soften 2 sticks of butter in the microwave on medium heat.
3.       Combine cheese, flour, rice krispies, softened butter, salt, paprika and mix well.
4.       Refrigerate dough for 2 hours.
5.       Remove dough from the refrigerator and roll dough into golf ball size balls.
6.       Place dough on a lightly greased cookie sheet and flatten each dough ball with a fork.
7.       Bake 10 to 12 minutes until golden brown on the edges.
